Cooked some taros with our octagonal handle knife


Today, I cooked some taros that I harvested in the farm. Isimmered it slowly with soy sauce, sugar, Japanese soup broth, and sweet sake, making the potatoes very soft and warm. This is a very standard dish in Japan during the cold seasons, and makes a delicious addition to packed bento lunches if you add some extra flavoring.


The taros have a smooth texture and a distinct “slime,” so you must be extremely careful when peeling its skin with a knife– your hands may slip and you may hurt yourself. This is when a trusted kitchen knife with a strong grip comes in handy.

Warm your body with ginger flavor

I just tried making beef and onions simmered in soy sauce.
First slice onions and julienne ginger. Then gently simmer the beef with soy sauce, sugar, and sake.

The flavor of ginger helps increase appetite. In Japan, the autumn leaves have become beautiful, and it’s getting colder and colder. Ginger helps warm your body, so I love to eat a lot of it in the cold winter months.
This dish also tastes great over rice.


Santoku knife is good for cutting the onion slices.
Using a sharp knife means you can prepare onions easily with no tears.
The weight of the blade cuts straight through the onion leaving the layers intact.
The Santoku knife is the knife most commonly used in Japanese homes. As long as you have one, you can handle any ingredient that comes your way, from vegetables to meat and fish. How about to get one?

In a Japanese household, you’ll find various foods on the table

In a typical Japanese household, you’ll not only find Japanese food, but also Western, Chinese, ethnic, and various other dishes on the table.
Pasta is a popular dish both at home and at restaurants.


Today, I made tuna and tomato pasta.
I crushed garlic with my knife and heated it, then fried it with canned tuna and tomatoes, and added salt and pepper to this simple pasta. This time, I added mozzarella for the final touch to give the pasta richness.
Aside from the standard pasta, we also favor a unique kind of pasta made with Japanese ingredients and flavors. I’ll introduce this dish another time.

Pumpkin salad for Halloween

It is almost Halloween, isn't it?
I made a pumpkin salad.


In the case of cutting tough pumpkin, I recommend a Nakiri vegetable knife.
With this type of knife, force can be distributed smoothly, allowing one to make cuts without slipperage.

Cut the pumpkin into pieces, and remove the skin to soften its texture.


After steaming the pumpkin in the microwave until soft, use a fork to mash it together. Mix in canned tuna and raisins. Then add salt, pepper, vinegar, and mayonnaise for flavoring.
Things like nuts or salad beans can be another tasty addition if you are so inclined.

Sharp knife for cutting soft tofu

This time we’ll introduce Mapo Tofu. A popular item on Chinese menus, this time with Miso paste added to give it a Japanese style flavor.
Tofu is good for you, and seems to be popular in the West too.


Fry some pork mince with salt and pepper, add a little soup made from chicken bones, and bring to the boil. Since tofu is the main ingredient, a little bit of meat is plenty. Season with chili bean paste and Miso paste, add diced tofu and spring onions, and cook thoroughly for about 3 minutes.


A single Santoku knife can prepare both vegetables and meat, and also cuts soft tofu beautifully.

Octagonal prism handle from Samurai sword

Our kitchen knife's handle is an octagonal prism.
If you have never used one before, you might be thinking to yourself: is it hard to hold?

But it is worth giving it a try. With the way that it fits right into your hand, you can really feel how smoothly force transfers to the knife.



The origin of the octagonal prism design can be traced back to a former samurai katana hilt design. The city of Seki, where this kitchen knife is made, has a prosperous swordsmithing history. You can feel how the techniques inherited from the swordsmithing era have carried over to the modern day kitchen knife.


Even when handling particularly juicy ingredients, or with wet hands, this easy to grip, slip resistant knife is safe to use.
On a side note, in both Japan and China, the number 8 is associated with good luck, and so octagonal items are often used as lucky charms.

Japanese curry udon noodles

Today we will be introducing a modification of curry: curry udon. 


Popular in many countries, curry is also made frequently in Japanese households.
Various types of roux and spices are sold in supermarkets.

As with curry udon, there are many dishes that feature leftover curry used in other recipes.
In the leftover curry, add water and broth. Include green onions, mushrooms, and fried tofu to your liking, and let it stew.
If you have potato starch, thicken the soup, and once poured over the noodles, it is complete. 



For smaller jobs like fruit, petty knife is indispensable.
