Petty knife is indispensable for cutting fruits.

How about making summer peach and mozzarella salad one of the dishes for a party at home?    



Place bite-sized peaches and mozzarella into the olive oil, top it off with white wine vinegar, salt and black pepper, then finish it off by sprinkling on some lemon zest.

Although you can whip it up quickly, it looks stunning and tastes authentic. And it goes well with some wine.

For smaller jobs like fruit, petty knife is indispensable.

Santoku knife is also good at cooking fish

The main dish today is grilled salted mackerel. For side dishes, we chose hiyayakko (chilled tofu) topped with plenty of condiments (including green onions, Japanese ginger, and Japanese shiso herbs), and lightly pickled cucumbers.



These are healthy, traditional Japanese menu items. They say that selenium, found in abundance in mackerels, has antioxidative effects, and is believed to have an impact on cancer prevention and anti-aging.



As always, for this menu, we will use the versatile Santoku Knife. Santoku can be used to clean fish like an expert, especially if they are the size typically eaten in homes. Of course, prepping the vegetables for the side dishes can be handled skillfully by the same knife, too.

Cook bitter gourds with a square shaped Nakiri knife

I picked some bitter gourds, we call them Goya in Japanese language, and made Goya Chanpuru.
Chanpuru is a dish from Okinawa, at the southernmost tip of Japan.
It is made by stir frying goya, tofu and if you like some ham or pork, with salt and pepper to taste, and finished by pouring in some egg.



The bitterness of the goya is made mild with the sweetness of the tofu and egg and so can be enjoyed by children as well.

In Japan, a square shaped Nakiri knife for cutting vegetables used to be common.


You can thinly shred cabbage or peel a daikon radish very well.
If you're a vegetarian, you will no doubt love this vegetable knife.
